Today was my Mom's birthday. My parents are both trying to watch their weight so they requested I make a low-fat spice cake. I made it from the box but used applesauce instead of oil. I was a little worried it would not turn out well because the zucchini bread I made with applesauce was something I would eat again but you could definitely tell the difference between that bread and the real thing. It almost had a funny aftertaste. I also decided to make the icing from scratch. Instead of butter I used margarine but there was really no way to get around the confectionary sugar. However, I did use a bunt cake which cut down on how large the slices were and decreased the amount of icing by more than half! The verdict on the lowfat spice cake? - DELICIOUS! Everyone loved it! This made me feel good that I made my Mom a lowfat dinner and dessert. I love when something I cook and work hard on turns out well (and for half the calories!).
WEDNESDAY
Breakfast -
3/4 cup Bran Flakes with 1/4 cup raisins
1 cup fat-free organic milk
Lunch -
DINED OUT AT A BRIDAL SHOWER
Spoonful of vegetable and macaroni pasta
1/8 slice of vegetarian quiche
Snack -
3/4 cup cantaloupe
Dinner -
3 oz. grilled salmon
1/2 baked potato
zucchini and asparagus marinated in light balsamic
Snack -
1/8 slice of lowfat spice cake
