Since I am on spring break I've tried to make a lot of plans with my girlfriends during the day. The only problem with all of these plans is that they usually include lunch. Well, as I've mentioned in the past dining out is always more risky than making your own meal. Since the weather has been so beautiful my friends decided to sit outside at a Mexican restaurant. For some reason these restaurants are always one of my biggest challenges to remain "good." It's too tempting with the salty chips and spicy salsa sitting right in front of you to not eat any. I can't say I didn't have any but I did try to only have some. I decided this was my evening snack for the day. It's also difficult at a Mexican restaurant to choose a healthy entree. I decided to go with chicken fajitas. That way I controlled how much chicken I put in my two tortillas, I added some veggies, and left out the high fat sour cream and guacamole. Dining out always takes more work that's for sure!
THURSDAY
Breakfast -
1 serving Fiber One pancakes
Banana
1 cup fat-free organic milk
Lunch -
DINED OUT
Chicken Fajita's (Approximately 2 oz. grilled chicken, lettuce, tomato, 2 tortilla's)
Handful of chips and salsa
Snack -
Fat-free yogurt
Dinner -
1 cup spinach and mozzarella ravioli with spray butter and parmesan cheese
Broccoli with 1 tbsp. margarine
Snack -
Apple
